The town was established in 1867 with the building of a frame house by the Civil War veteran Lemuel Noah Edward. Texas and Pacific Railway completed the town’s first railway station in 1881. The city became famous for its peanut farms that colored it from East to West, making it look very beautiful. However, horse ranches came to dominate the town’s social and economic activities as late as 2009. By 2010, Aubrey had a population of 2,595, according to a census report commissioned the same year. The Starr's Service Station, situated opposite the Ever After Chapel, served as Aubrey's main social center as of 2009.
