I research and write entries for Texas Real Food. This means that I’m part of the team responsible for researching and gathering up all available information on all real food that’s available in Texas and presenting them in easily digestible bites. Everything from produce, herbs and spices, condiments, meats, you name it and we’ll feature it.
Over a decade ago, I was writing freelance before leaving it to focus on the food industry both as a chef and food entrepreneur. Now, I have been able to combine both my passion for real food and writing here at Texas Real Food.
As a chef and food entrepreneur, the driving force behind everything that I served was to make quality food that meets with slow cooked standards, and as much as possible, doesn’t use any preservatives. Two of my food philosophies align perfectly with what TRF stands for, as a staunch advocate for sustainability and food security.
What’s your favorite ‘real’ food or Texas staple?
My favorite real food is beef rendang. I cook it on days that are particularly good as a celebration or particularly bad as a balm to make me feel better. I love hand-grinding fresh herbs and spices to make the spice paste in the mortar and pestle that my grandmother left me. This is further intensified by release of all the aromas when the spice paste first hits the hot oil. After that, the warm and satisfying feeling that comes after taking the first bite, after slow cooking some beef brisket in the spice mixture for hours until it virtually melts in your mouth.
