3 large zucchinis

Sea salt

1 egg

2 tbsp plain flour

1/2 tsp black pepper

1 tbsp fresh parsley, chopped

1/2 tbsp fresh dill, chopped

1/2 cup of vegetable oil for frying

For the sauce:

1/2 a cup of sour cream

2 tbsp lemon juice

Salt and pepper to taste

1 tbsp fresh parsley, chopped

Fresh chives, chopped


  1. Use the rough side of a cheese grater to grate the zucchini. Lay the shredded vegetables onto a clean dish towel and sprinkle with salt to draw out water.
  2. Wrap the shredded zucchini in the dish towel then twist the top over a sink to squeeze out most of the moisture.
  3. Transfer it to a bowl then mix in the pepper, an egg, the flour, and fresh herbs.
  4. Use your hands to form little patties with the shredded veggies and set aside while you heat vegetable oil to 350°F.
  5. Once the oil is hot carefully lay in the fritters and fry on either side for 2-3 minutes.
  6. Meanwhile, make the dip by combing all the sauce ingredients in a bowl.
  7. Drain the fritters on some paper towels then serve hot.
