Ingredients

  • 4-5 Large Carrots
  • 1 tbsp Unsalted Butter
  • Salt to taste
  • 250ml Vegetable stock
  • 3-4 Sprigs Fresh Thyme
  • 1tsp Fennel Seeds

Instructions

  1. First wash and peel the carrots, but keep them whole.
  2. Place a skillet with a lid onto medium-high heat and add the butter and fennel seeds.
  3. Toast the seeds for 2-3 minutes in the butter before adding the carrots, seasoning with salt, and sauteeing them in the pan for several minutes. A little bit of browning is ok but keep it minimal.
  4. Next, add the thyme sprigs whole, the white wine vinegar, and stock. Bring it to a boil then turn it down to a simmer.
  5. Simmer the carrots for 25 minutes or until easily cuttable (not mashable) with the side of a fork.
