However, Eden East, the restaurant situated on the farm, is now under the management of Chef Sonya Coté and David Barrow. Originally established by the Foores in 2009, Springdale Farm boasted a beloved vegetable stand that was a favorite among East Austin locals. In 2013, Sonya and David introduced a restaurant on the farm, taking the farm-to-table concept to new heights. In early 2018, the Foores decided to sell the farm to a developer, leaving Sonya and David as the sole proprietors.
Despite these changes, Eden East has maintained its farm stand and restaurant operations. They have also continued the popular farm tours initiated by the Foores. Located a mere 3 miles from downtown Austin, the farm remains a highly sought-after destination. When asked about the farm and restaurant's future in light of the upcoming development, David's eyes gleam with anticipation, suggesting exciting times ahead.
