The new brewpub is just about a block away from the hotel. New Braunfels is a town rich in German heritage, and both the hotel and the brewery honor the past and the German tradition of beer making. The hotel and brewery is named after Walter Faust Sr., who spearheaded the initial development of the hotel. Opened just before The Great Depression, Faust’s determination also helped keep the hotel open during the difficult period. Today, the brewery creates a selection of year-round beers, seasonal varieties, and small batch creations. They also serve wine and a variety of local guest beers on tap.

New Braunfels Brewing

They goes beyond traditional beer styles and brews what they like, using unique ingredients, unique recipes and a fierce ingenuity. All of the beer they offer is dry with a balanced acidity. Their base beers are “Hefeweizen, Dunkelweizen Weizenbock and Oktoberfest.” Their medium is grains, hops, fruit, spices and their local blend of wild yeast and bacteria. They also barrel-age and secondarily ferment these releases to create unique and new beers. They got a bar at the brewery with 8 taps and a stool for you to enjoy them all. What goes in the beer they make is as much local wheat, local water and local passion as they can get their hands on.

Guadalupe Brewing Company

Craft Brewery in Canyon Lake - 22.31 mi

Guadalupe Brewing Company uses honey as a key ingredient in several of their craft beers. Concern for the honeybee population, therefore, is just one of the many passions by its owners. To this end, the company contributes a portion of the proceeds from the sales of their flagship Texas Honey Ale to support Texas A&M University’s bee research program. The brewery opened its doors in 2012. Owners Keith and Anna Kilker focus on “full-flavored, well-balanced, and approachable” beers using only natural ingredients. Their lineup of award-winning beers includes the Pumpkin Style Texas Honey Ale and their Belgian Style Tripel. Both are medal winners at the U.S. Open Beer Championships, among other creations. Interestingly, head brewer Keith was not your typical experienced homebrewer. He had never brewed beer before. Instead, he studied brewing science at the Siebel Institute just prior to opening his dream brewery.

Thirsty Planet Brewing Co

Craft Brewery in Austin - 23.07 mi

There’s nothing random about Thirsty Planet Brewing Company’s methods when it comes to brewing great craft beers. Everything has a purpose. For example, they started back in 2010 with just ales, which take less time than lagers. They donate tips gathered at their tasting room to charities, and sponsor several local charities whenever possible, including the Mountain Gorilla Conservation Fund. Local artists get traction and support through their Brite Tank and Event Brite initiatives. They donate spent grains to local farmers, and recycle paper, cardboard, and glass products, too. Business decisions are purposeful, too. They celebrated their seventh year with the launch of Buckethead IPA sold in a special 7-pack beer. Of course, these came in a bucket shaped container. Watch out for the brewery’s taproom reopening. They closed the old one to concentrate on production and distribution, boosting their capacity and making them available on store shelves.

Wild Bunch Brewing Co.

Craft Brewery in Georgetown - 23.63 mi

Open since 2017 and located “in the middle of nowhere”, Wild Bunch Brewery announces its presence once you see its handwritten sign. Brew master Jarle Lillemoen owns and operates Wild Bunch Brewing Company. He and Managing Member Jamie Caras both hold doctoral degrees in biochemistry, which should come in handy at the brewery. Calling his beer the “best damn beer in Texas”, Jarle only uses “high quality ingredients” in his “100% unfiltered beers”. He also uses the traditional method of brewing using an open propane flame throughout the process. He is also non-traditional in the age of state-of-the-art brewing equipment. Yet, his method yields “richer, more intense flavors and colors”. A blogger writes that Wild Bunch as of October 2019 offers seven beers served in jam jars at their taproom. Not bad for a brewery that’s designed and hand-built by Jarle himself. Finally, prior to establishing Wild Bunch, Jarle was the master distiller at Bone Spirits Distillery in Smithville.
