Austin’s Uncultured Ales is a “very low production brewery” specializing in aged sour beers. Founder Cass Everitt is a self-taught homebrewer who happens to like sour beers. He specializes in what he calls “laissez-faire fermentation”. The process can take several months or even years, which accounts for his low production capacity for now. The brewery also doesn’t have a taproom just yet, but has managed to produce eight varieties. These include Fugarillo, a light golden dry hopped sour, and C-A55, a sour red ale. For distribution, he relies on Flood Independent Distribution. Meanwhile, fans of his beers can check Uncultured Ales’ Facebook page for information on where to find his beers.
