Strawberry Cake Pops
1 Cup Crumbled cake
3-4 Freshly chopped Strawberries
Sprinkles and strawberry slices to decorate (optional)
For the vanilla buttercream frosting
1 Tbsp Butter
3 1/2 to 4 Tbsp Confectioners’ Sugar
1/2 tsp Milk
1/2 tsp Vanilla Extract
Chocolate/chocolate bark/candy melts to coat your cake pops
For the frosting:
- In a small bowl beat butter for a minute. Add sugar, milk and vanilla and beat until creamy and light.
For the cake: This recipe uses crushed vanilla bundt cakes, use any leftover cakes you have.
- For the Cake pops:
- Add the frosting in crumbled cake.
- Add strawberry chunks and roll into balls. Keep the chunks slightly bigger or crush finely for a smoother mouthfeel.
- Chill for about 1 1/2 hour in refrigerator.
- Melt your chocolate in a double boiler.
- Dip cake pops in the chocolate using a fork, take them out and gently tap the fork on the edge of chocolate bowl to shake off the excess.
- Top with a strawberry slice or sprinkles while the chocolate isn’t set yet. Enjoy!
