Great cheese must necessarily start with great fresh “unadulterated raw milk”. In this regard, Eagle Mountain Farmhouse Cheese Co. uses only the pure fresh raw milk for their cheeses. The owners are avid cheese-lovers with an affinity for the specialty regional cheeses that are made in different parts of the world, especially in western Europe. They are currently making their Texas versions of some of these traditional cheeses, along with a few original cheeses from right here in the Lone Star State. They currently offers Gouda style cheeses, Alpine style cheeses, Trappist style cheeses, tomme style cheeses and others, including natural rind and washed rind cheeses. Of note is the “Birdville Reserve”, a Trappist-style mountain washed cheese that won a “first place blue ribbon” in the American Cheese Society's Annual Competition held in Montreal, Canada in 2011.
