Austin’s Uncultured Ales is a “very low production brewery” specializing in aged sour beers. Founder Cass Everitt is a self-taught homebrewer who happens to like sour beers. He specializes in what he calls “laissez-faire fermentation”. The process can take several months or even years, which accounts for his low production capacity for now. In a reversal of roles, Julia retains the title of headbrewer although it’s Greg who comes up with the recipes.
