Open since 2017 and located “in the middle of nowhere”, Wild Bunch Brewery announces its presence once you see its handwritten sign. Brew master Jarle Lillemoen owns and operates Wild Bunch Brewing Company. He and Managing Member Jamie Caras both hold doctoral degrees in biochemistry, which should come in handy at the brewery. Calling his beer the “best damn beer in Texas”, Jarle only uses “high quality ingredients” in his “100% unfiltered beers”. He also uses the traditional method of brewing using an open propane flame throughout the process. He is also non-traditional in the age of state-of-the-art brewing equipment. Yet, his method yields “richer, more intense flavors and colors”. A blogger writes that Wild Bunch as of October 2019 offers seven beers served in jam jars at their taproom. Not bad for a brewery that’s designed and hand-built by Jarle himself. Finally, prior to establishing Wild Bunch, Jarle was the master distiller at Bone Spirits Distillery in Smithville.
