The Brigadoon Brewery & Brew School attempts to recreate the "Scottish Renaissance brewpub". Located on the grounds of the Texas Renaissance Festival, it allows guests to step back in time and see "period specific" brewing equipment and techniques. This includes use of ingredients and recipes that would have been available during the 1400s through the 1600s”. Opened in 2008, the brewery uses modern equipment, too, but they try to remain an authentic and “unique living history demonstration” of techniques used during the Renaissance period. The brewery takes its name from the 1947 musical of the same name. The musical “centers (on) an enchanted village in Scotland, (and) features an array of traditional music and dance". Each year, at festival time from October to November, the team dons authentic period costumes to serve their beers. Established in 2014, the Galveston Bay Beer Company is Galveston County’s largest brewery. At the time, it was also one of the first in the area. The interesting thing about the brewery besides its beers is its commitment to preserving Galveston County’s rich beer brewing history, which dates back to 1895. The company has artifacts related to the craft of beer brewing from the past 120 years. Their air-conditioned taproom at Dickinson is open daily. With at least 12 beers to choose from, some are exclusive to the taproom only. Opened in 2016, they “specialize in lighter style beers but dark beer fans can enjoy the Bull Shark, their Scottish ale". A blogger advises readers to ask their bartenders about “High Grade” and the beer's interesting backstory during the prohibition era.

Established in 2016, Saloon Door Brewing Company is the creator of several popular and critically acclaimed brews including “Tasty AF Peanut Butter & Chocolate Milk Stout, I Must Break You Russian Imperial Stout, Panhandler Pale Ale and many others.” They make their craft beer in house with a 10-barrel system using only the finest ingredients available. They also focus on sustainable sourcing, using local vendors, and making maximum efforts to keep carbon footprint at an absolute minimum. Their rustic, “old west taproom” is roughly 2400 sq ft that can comfortable fit about 150 people. They have a big board where you can see the available brews that changes weekly, but they usually have between 16-20 ice cold, delicious, craft beers available on tap and/or on nitro. If beer isn’t your thing, they also have a house red and white wine, hard cider, soda and water available for you!
