The Celis Brewery name is synonymous with witbier or “white beer”. The name Celis had gone through two iterations previously. Pierre Celis, the legendary brewer, built two breweries - one in Belgium and another in Austin - which ended in "Faustian deals” and forced Pierre to give up the breweries he built. The beer world mourned Pierre's passing in 2011. He is credited with reviving witbier, which had all but died in the 1950s.

Celis Brewery “2.0”, essentially the third iteration of the brewery, is by Christine Celis, Pierre’s daughter. With help from outside investors, the brewery and taproom opened in 2017. Using her father’s original recipes, Christine recreated the beers that were her father’s legacy. She also introduced new ones that promise to continue the family name’s legendary reputation. Daytona Camps, Christine's daughter, joins her mother at the brewery. Like her mother, she is also a brewer having perfected her brewing skills around the U.S. and in Europe.
