Uncultured Ales

Craft Brewery in Austin - 20.68 mi

Austin’s Uncultured Ales is a “very low production brewery” specializing in aged sour beers. Founder Cass Everitt is a self-taught homebrewer who happens to like sour beers. He specializes in what he calls “laissez-faire fermentation”. The process can take several months or even years, which accounts for his low production capacity for now. The brewery also doesn’t have a taproom just yet, but has managed to produce eight varieties. These include Fugarillo, a light golden dry hopped sour, and C-A55, a sour red ale. For distribution, he relies on Flood Independent Distribution. Meanwhile, fans of his beers can check Uncultured Ales’ Facebook page for information on where to find his beers.

Compadre Brewing

Craft Brewery in Round Rock - 21.51 mi

Officially opened in the summer of 2019, Compadre Brewing is owned and operated by the Galvan family in Pflugerville/Round Rock. It’s a dog-friendly and family friendly brewery that started with a “Make Your Own Beer Kit” Christmas gift for Roel, the brewery’s owner and brewer. Together with his father Roy, the two set out to discover the world of craft beers, which culminated in their opening Compadre Brewing. As fate would have it, the family took over a short-lived brewery that used to exist at their present location. The brewery soft-opened with their Cinco De Cele(brew)cion last May 5, and served about 32 different craft beers on tap, including their own creations. Bluebonnet Beer Company

Bluebonnet Beer Company is a family-run brewery in Round Rock. The owners are husband and wife David and Clare Hulama. David holds a degree in Biology from the University of Texas at Austin. He acquired his brewing skills from the Institute of Brewing and Distilling in London, and at University of California at Davis. Clare, meanwhile, is a sales and marketing veteran of over twenty years. The brewery and taproom they established in 2013 is a dream business nearly ten years in the making. On weekends, the children might even be at the taproom helping their parents. The brewery has four core beers year round, with fifteen seasonal beers available. The brewery also has the “very limited distribution” Immortal Ten Series. Available only in Round Rock, these beers are dedicated to the ten Round Rock students and staff of Baylor University who lost their lives in a tragic 1927 accident.

Twisted X Brewing Co

Craft Brewery in Dripping Springs - 24.07 mi

Located in Dripping Springs and open since 2011, Twisted X Brewing Co. proudly specializes in beers to share with friends and family. Using “high-quality, local products”, their beers have a “Texas-influenced, Mexican-style” that will make you “rethink how you view beer”. The brewery started out “with the goal of educating people how different ingredients can make complex beers”. Today, they continue to use the 3BBL system they started the brewery with, which allows them constantly to experiment and develop new recipes. The brewery provides free tours for guests to learn about their brewing process. It's at 1pm and 5pm on Saturdays, and 1pm and 3pm on Sundays. Drop by the brewery often. There's bound to be a new small batch beer on tap.

Wild Bunch Brewing Co.

Craft Brewery in Georgetown - 24.30 mi

Open since 2017 and located “in the middle of nowhere”, Wild Bunch Brewery announces its presence once you see its handwritten sign. Brew master Jarle Lillemoen owns and operates Wild Bunch Brewing Company. He and Managing Member Jamie Caras both hold doctoral degrees in biochemistry, which should come in handy at the brewery. Calling his beer the “best damn beer in Texas”, Jarle only uses “high quality ingredients” in his “100% unfiltered beers”. He also uses the traditional method of brewing using an open propane flame throughout the process. He is also non-traditional in the age of state-of-the-art brewing equipment. Yet, his method yields “richer, more intense flavors and colors”. A blogger writes that Wild Bunch as of October 2019 offers seven beers served in jam jars at their taproom. Not bad for a brewery that’s designed and hand-built by Jarle himself. Finally, prior to establishing Wild Bunch, Jarle was the master distiller at Bone Spirits Distillery in Smithville.

Acopon Brewing Co

Craft Brewery in Dripping Springs - 24.43 mi

The Acopon Brewing Company was established by the same group who gave Dripping Springs The Barber Shop. Established to provide a focus on English-style ales, the team opened another taproom just a stone’s throw away from the Barber Shop's location. The name is taken from a “restorative or cordial medicine or application”. The taproom opened in September 2017. It provides a selection of craft beers – not just English ales. It even has wine, cider, and sodas for non-fans of craft beers. The brewery follows an “old world model where each town in Germany or England would have their own favorite local brewery”, and the beer could only be found and enjoyed there. They have board games for use by guests, and welcome dogs into the taproom. They don’t serve food, so guests are also welcome to bring food in.

Root Cellar Cafe and Brewery

Producing a range of locally sourced Belgian-style brews, Darkside Fermentation is located in the storage room of “The Root Cellar Cafe in San Marcos.” It started when Brewer and owner, Silas Parker approached The Root Cellar’s owner, Kyle Mylius in May 2009 to sell Darkside beer in the cafe. They offer Darkside’s flagship beer, “Mark of the Yeast: 78666” which is referred to by Parker as a “dark medieval ale.” This beer is nourishing and the finish lingers. Other beers in the Darkside lineup include the draught beers BrideAle and GroomsBeer, Weiz Guy, Golden Mean, and Pale Rider, a Belgian pale ale. Come in and try some these great beer that are brewed in-house. They also have a lot of seasonal flavors to choose from.

AquaBrew

Craft Brewery in San Marcos - 24.64 mi

The AquaBrew is a brewery, beer garden, restaurant, and events center located in downtown San Marcos. Opened in March 2016, it’s a spot where “craft beer, culinary delights, local music, and community come together” and aims to stimulate all the senses. Its events center can accommodate up to 500 people, and its rooftop bar and patio has bench-style seating that gives a casual and friendly vibe – perfect for taking in the Texas air. They have about 10 varieties on tap, and also usually feature a couple of guest breweries as well. Growlers and crowlers are available so you can take home a favorite brew.
