You can drink it "either straight up or in a mixed drink". It has a "very light taste" that you "can mix with just about any mixer you please". What does the 8th Wonder Brewery do when it reaches icon status for its craft beers? It moves on to distilling spirits, of course! Brewing craft beers in a dome-like warehouse, the founders of 8th Wonder Brewery jokingly named their company after the old moniker of the Houston Astrodome. In 1965, Houston Astrodome was the world’s first air-conditioned domed stadium and dubbed the “8th wonder of the world”. 8th Wonder Brewery was established in 2013, and promised “fermented fun in East Downtown Houston”. It has since become known for its different varieties of craft beers. In 2018, the company expanded to the liquor and spirits business by opening 8th Wonder Distillery right across the street from the brewery. They currently serve their house brand vodka and gin as well as cocktails and their craft beers at the distillery.

They have "a great tour guide" that is "knowledgeable and took great pride in what they do there". Acre Distilling takes its name from the distillery’s location, the infamous Hell’s Half Acre. Once Fort Worth’s “den of sin and vice” and the site where renegades like Butch Cassidy and the Sundance Kid roamed, the area is now home to Acre Distilling since 2015. The founders of Acre Distilling were once with a brewing company until they ventured into the liquor world. Along with the distillery's aptly named spirits such as Hell’s Half Acre Rum, Longhair Jim Bourbon, and Miss Addie’s Vodka, the distillery also serves coffee and cocktails. Acre Distilling has over 18 different products including single malt whiskey, bourbon, vodka, gin, rum, cordials, bitters, and flavored liqueurs. Among many awards, the distillery won Vinepair’s 10 Best Craft Distillery Tasting Rooms in America award in 2017. Besides the distillery, you can also find Acre Distilling's products at Spec's, Total Wine & More, Spanky's Liquor, and Goody Goody. The bar is open to the public for tours, tastings, and events year-round.

AFT Distillery

Edelbrand or “noble brandy” is a premium European fruit brandy created by following strict standards. Master distiller Alexandra Cantwell and husband KC are the founders of AFT Distillery, the only edelbrand producer in Texas. The usual fruit brandies produced today use fermented fruit juice. Edelbrands, meanwhile, require using only whole fruit without the additional sugars, flavors, or additives. This Alpine process, an 800-year old tradition, defines the category of edelbrands. The distillery released its first Alpengold apple, Williams pear, and cherry edelbrands in February 2018. This was after the couple spent four years quietly perfecting the craft to produce them. Despite many bumps in the road, the distillery’s quest to produce traditional artisanal brandies recently won it five of 18 medals in the brandy category of the 2019 American Craft Spirit Awards.

Alamo Distilling Co.

The Alamo Distilling Co. based in the heart of downtown San Antonio is on a roll. Co-founders Daniel Taylor and Nick Burns once dreamed of escaping their dreary jobs on New Year’s Eve 2014. Eventually quitting their jobs and taking a leap of faith, they set up shop in a 1,100 square foot facility near the San Antonio International Airport before their first year of business ended. In 2017, they moved into a 7,000 square foot building. Before 2019 ends, they are mobilizing to move into a 38,000 square foot facility. After having suffered through a brand identity crisis, the formerly-named Texas Craft Whiskey distillery now creates Alamo’s Black Label Bourbon, Catimore Coffee Liqueur, and Alamo Vodka as their flagship products, plus a variety of small-batch experimental spirits. They also shifted their energies away from the moonshine and rum markets. As a grain-to-glass distillery, they continue to remain committed to using the best ingredients possible and crafting memorable spirits.

Andalusia Whiskey Co.

The Andalusia Whiskey Co. is a distillery on a working ranch in the heart of the Texas Hill Country. Andalusia Whiskey Co. is a single malt whiskey distillery only sells their Andalusia White, Revenant Oak, Stryker, Andalusia Triple-Distilled whiskeys at their tasting room or at Texas retailers. The distillery was established by Tommy Erwin and Ty Phelps. Both met at the Real Ale Brewing Company where they were former employees, quickly became friends, and decided to open their own whiskey distillery. With the help of family and friends, they opened the grain-to-glass distillery in 2016. Andalusia Whiskey Co. distillery is proudly a zero-waste facility. They feed the spent grain to Ty’s livestock at the working ranch as part of their commitment to the environment. They also built a 56,000 gallon rainwater collection tank on the property. Tours at the distillery happen every day at 2pm. For groups smaller than 10, they don't require reservations.

Azar Distilling

Husband and wife Trey and Kimberly Azar founded Azar Distilling. Azar Distilling started with Cinco Vodka in 2009 but the couple took a circuitous route to establishing the distillery. Trey Azar was in the oil and gas business when he decided to go back to his roots in liquor. His grandparents were the first Coors distributor in Texas, and he was a wine salesman and buyer in a former lifetime. Kimberly, meanwhile, worked in the cosmetics industry. While on a business trip, Trey realized there’s a niche for a premium American vodka. Trademarking the brand Cinco Five Star after the number of kids he and Kimberly have, the couple were soon on their way to producing their award-winning vodka. The vodka takes five times longer to make, results in a vodka five times better tasting, but without the cost. Cinco Vodka is now part of Azar Family Brands. The Azars expanded their product line to include Seersucker Gins in 2016.

Artisan on Alamo Distillery got its start in 2012 with Spike Vodka, the only vodka made from prickly pear cactus. The distillery then followed up its initial offering with the introduction of Texas Pride Vodka, “an award-winning corn-based vodka”, and Chupacabra Juice Moonshine, “an ultra-smooth corn mash moonshine. Soon, in 206, founder and master distiller Nicholas Spink opened Artisan on Alamo Distillery featuring both the craft vodka distillery and a vodka lounge. In answer to popular clamor, he further expanded in 2018 to offer Bexar Ridge Bourbon Whisky and Pecan Ridge Whiskey. Besides its premium line of spirits, the Artisan on Alamo also features a relaxing outside patio for guests. Distillery tours are at 4pm and 7pm from Thursdays to Saturdays. Happy hour drink menus are available until 8pm. Guests can have food delivered to them at the lounge, or hire their own caterers for special events.

Austonian Spirits

Lawrence Sasso, founder of Austonian Spirits, took advantage of his engineer’s background and found a way to create excellent Texas whiskey without using traditional oak barrels. He guards his secret process closely, and it makes Austonian Spirits the first company to bottle a sustainably matured whiskey. His process uses significantly less wood, and “reinvent(s) conventional barrel aging”. Most whiskey fans know about the damaging effects the whiskey industry brings because of the demand for oak barrels. The mission “to (create) an excellent tasting, and sustainably matured whiskey” drives Sasso and the Austonian team. The team must be doing the right things. Austonian Spirits has won top awards in the 2018 and 2019 editions of the Texas Whiskey Festival. In 2017, it also took home a Best in Class Award in the Whiskies of the World competition.

Avonak Distillery

Avonak Distillery is Texas’ first certified organic distillery in Texas. The distillery takes its name from a small town north of Houston, where it is based. Founded in 2016 by Kyle Wray, his wife, and a diverse group of Houstonians, the distillery introduced its first products to the market in mid-2018. Avonak Distillery’s first products were its Avonak Vodka, Eye10 Gin, and Fifty9 Gin. The distillery is also Texas’ first “grain-to-glass” distillery. Kyle and his wife traveled the globe and visited places with age-old distilling traditions. They realized they could use their knowledge “to build a tradition of their own” in the city they call home. With its line of “premium products made in small batches” and “accented with local flavors”, master distiller Kyle plans to release a bourbon product soon. Balcones Distilling

Established in 2008, Balcones Distilling is only the second Texas distillery to get its distiller’s permit but it beat out the competition when it released Baby Blue corn whisky to the market in 2009. Dubbed “the original Texas whisky”, Baby Blue's market debut achieved historic firsts. It marked “the first time Texans could buy a bottle of Texas made whisky”.  Balcones Distilling made history again in December 2012 when Balcone's Distilling's "1" Single Malt beat out whiskies from more established Scotch houses in London’s Best in Glass competition. Dubbed “The Judgement of London”, the win “helped legitimize American craft distilleries… and signaled the emergence of Texas as a whiskey-producing region”. The distillery produces three lines. Their Classics are year-round whiskies available at distributors. Also, the Annual Releases are “released only once throughout the calendar year”. Finally, their Special Releases are “extremely limited” whiskies including some that "may never be re-released". As a testament to their commitment to quality, the "1" Single Malt still continues to win awards to this day!

Banner Distilling Company

Banner Distilling Company founders Logan Simpson and Anthony Jimenez had a dream of putting up their own distillery. Simpson has a Ph.D. in Chemistry, while Jimenez has a family history of bootlegging during Prohibition. Both were engineers at the same company and one day decided they had enough. With a budget of just $45,000, they established Banner Distilling in 2012. Using Craigslist, Google, and lots of resourcefulness, they designed and created their own still for just $300. Meanwhile, they kept their day jobs and toiled on their distillery nights and on weekends. They released Banner Organic Vodka in 2014 ahead of their preferred whiskey products so that that it could generate enough income while the whiskeys aged. The vodka went on to win multiple awards. The following year, they released their first bottles of Banner Wheat Whiskey, which also won accolades in different competitions. Cheers to bootstrapping!

Bartletts Distillery

Bartletts Distillery takes its name after one of Van Barkin’s ancestors. The distillery’s establishment is a perfect example of someone finding opportunities in the face of adversity. Van worked in oil and gas until, after 20 years in the industry, he was laid off in 2015. With basic knowledge in brewing his own alcohol and beer, Van and his wife decided on the direction he was going to take. In 2016, the husband and wife team established the distillery, and in 2017 purchased the Conroe property it stands on. By July 2018, the Barkins were in the liquor business. Bartletts Distillery's current products include white, dark, gold, and spiced rums, single malt whiskeys, and an un-aged version of its single malt whiskey. They recently renovated their tasting room. It now accommodates more people, and includes a small stage for live performances. They also made restrooms compliant with the Americans with Disabilities Act.

Ben Milam Whiskey Distillery

Ben Milam Whiskey Distillery should include "women power" as an ingredient in their bottles. After years in the entertainment industry, founder Marsha Milam established Provision Spirits. She then named the distillery and its products after Ben Milam, a distant relative and a hero of the Texas Revolution. In 2017, without her knowledge, her head distiller submitted their single barrel bourbon in the 2017 San Francisco World Spirits. It went on to win a coveted Double Gold. The distillery repeated its win with a gold in the 2018 edition. In 2018, Marlene Holmes joined Marsha at Ben Milam as Head Distiller. Formerly from Jim Beam, she brings 27 years industry experience to the young distillery. Finally, in a casting coup of sorts, Marsha announced in early 2019 that world-renowned whiskey expert and author Heather Greene would join as CEO and Partner. Together, the three are launching the Milam & Greene Whiskies line.

BlackEyed Distilling Co

BlackEyed Distilling Co's first vodka was crafted by hand from black-eyed peas. Their "facility is inside an old firehouse and has a bar upstairs". When you visit, you will find the "environment is welcoming and their drinks are fantastic". Their "fantastic cocktails and their vodka" are "very unique and memorable". With an "excellent vodka and even better whiskey" that you can drink, "you won't regret coming here". Whenever you "find yourself in the Fort Worth area near downtown, be sure to make the Black Eyed Distilling Co a destination stop". Also, "be sure to take a tour while you’re there". It is "well worth it".

Rio Brazos Distillery

Rio Brazos Distillery is Brazos County's first and only distillery creating slow artisan whiskey in the heart of Aggieland. It is a "neat little outfit" with an "informative & entertaining tour/description of the distilling process". Their "seating is nice" and you will be "able to see their bottling process right down to where they label it one bottle at a time". They have a "very informative tour" and "the owner and master distillery" is "very thorough" and tell "many more details". Their "whiskey is smooth and easy to pallete". This distillery really "makes top-notch spirits". When visiting, "you should take a tour and buy local". You will have a "fun time all around" with a "great product".

Cinco Vodka

They do not have an online presence as of this writing since their website domain will be coming soon. Cinco Vodka's vodka has already won several awards from "international spirits competition". This vodka is "clean and smooth" and "it neglects the harsh, overly alcoholic characteristics present in many vodkas, even many in its price range". It is a “martini lovers vodka”.
